Pizza that will remind you of Italy made by a small, family-owned business in Bedford.
Our dough is made using a mix of white Italian and wholegrain stoneground British flour, yeast, water, and salt. Nothing else. Proved over 24 to 48 hours to obtain a crispy and easy-to-digest pizza.
The man behind the dough…
Alan has worked in hospitality his whole life. From working in 5-star hotels and Michelin-star restaurants in Italy and London covering all roles from kitchen to front of house, he moved to Tempsford with his family about 10 years ago. He opened a little pizzeria in the heart of Sandy called Pecoro and brought his crispy pizza-style to Bedford taking over Etna in June 2022.
When he’s not making pizza dough, talking to customers, delivering pizzas, and spending time with Leah and Kai, Alan trains hard to become one of the top Home Counties table tennis (ping pong) players.
